Well, it’s all over for another year. We only had four groups tonight, it was too perishing cold and the gritting wagon out doing the rounds. The kids weren’t afraid of the Foxes head; in fact one little girl choose it has her treat and almost blarted when I slapped her fingers LOL. All the others stroked him, can’t wait till next year I may try a selection of offal.

Esme, present company excepted it’s no problem out running those with wheel chairs and zimmer frames once I get the ankle tag off.

Well, I’ve been absent from this site for a while and have just noticed this Cheesecake Topic and thought I’d share a recipe I stole from my sister.

A very simple Double Delicious Cheesecake (I call it this because of the list ingredients)

2 tubs of Philly (yeah I know I’ve mentioned Philly before but it really is good)
Mascapony would probably work but why would I want to try it and risk disappointment)
    2 tubs of cream
2 tubs of full fat vanilla yogurt (there’s no point going for a low fat alternative with this pudding it’s to die for and you most probably will)
2 oz. vanilla caster sugar or normal caster with vanilla essence.
    2 oz. unsalted butter.
2 oz. digestive biscuits for a thin base add more for a thicker lining, I sometimes add crystalised ginger
    2 Bowls
    2 8” tins.
    2 spoons.
and a small dog in attendance.

    Method.

Beat the cream until it forms soft peaks and empty into a cool bowl.
Give the dog the empty tubs to lick out.
Using the same bowl (no need to clean it) add the Philly and sugar, mix well, add the yogurt. Give the dog the tubs of Philly and yogurt. You could use a food processor for this stage; I do.
Melt the butter. Place the biscuits in a plastic bag and break with the rolling pin you used when making the chicken breasts (you’ll find it in the kitchen drawer)
Now I sometimes use ginger biscuits or amaretto biscuits which people give me for Christmas, no one likes them so you may as well use them up because the tin they come in is quite pretty.
Mix the crumbs with the butter,
Line 2 X 8” shallow tins with a layer of cling film (this will aid removal.)
Spread the crumb mix over the film and lightly press with the back of a spoon to the desired thickness you require. If you have too much you may make individual portions in a ramekin of glass dish (looks good this way)
Gently fold the mixture into the cream. It’ll be very light at this stage and the dog who will have finished his tubs and will be sitting attentively by your feet dribbling.
Spread the mixture into the tins approx. 2” deep even Americans wont be able to handle this any thicker. ☺
Decorate by dragging a knife over the surface like a ploughed field.

Lick out the bowl because it’s too good to give to a dog and he’s probably had enough already.
The Cheesecake will set in a chilled place over night as the yogurt’s live culture does its job.
When ready place a plate on top and invert, remove the cling film and place another plate on top and invert again, adjust the decorated top which may have become damaged.
Serve with a swirl of raspberry coulee; to the side never on top.
Experience the silence while your diners eat.
    Should serve about 8-12
You may find you can freeze it; I wouldn’t know it’s never lasted that long.
    Enjoy

    Yo,

I had an email today from Esme, I had asked whether she would like me to write on her behalf, she said yes so here I am.
As you know Esme is at home, the stay in hospital was not to her liking and probably gave her the impetus to get well enough to get out. There’s must be some logic there in the way the hospital is run. LOL Whatever.

Esme continues to make progress, albeit painfully slowly and cannot yet manage to return to the forum and thank you for your good wishes, prayers and kind thoughts. She was touched (but some of us knew that) by the shear numbers of cyber net friends she has. I have collected messages from all over for her and am proud to be part of such a community as you all should be. XXX

I reckon there will be an extensive period of quiet recovery before she’s well enough to respond to you in a manner which is uniquely hers. I wait for the day that her wit graces these pages again.

I will copy and paste this message to her other ‘forums’ but please accept my assurance that each and every one of you on this site are her favourites. LOL see what I did there.
So, before compassion fatigue sets in. TY. I think you’re smashin

As succinct as ever Mary:) yeah real serious stuff. Don’t get much worse for this ‘babe’ to go through.

Nah, you haven’t offended anyone who’s added to this thread Anita, I’m sure we all hope you never suffer the loss or even the possibility of the loss of a friend/relative; although the chances are slim that you’ll get through life without that experience. Many of us have first hand knowledge and know what it’s like to lose a friend, a parent or even a child.
    Stay lucky.

A few days have passed since the last update and I can report that Esme’s condition has improved. If she continues she may leave hospital either next week or the following. There’s still a long way to go but it looks as though she has started her journey of recovery.
As Esme’s condition strengthens so will her ability to comprehend the messages posted here,
    keep ‘m’ coming.
