Hello F3!
I am starting a thread here dedicated to cooking :D
The aim is to post pictures and recipes of our cooking/meals/dinners.I would love to learn some new recipes that have been tried and tested! We can even leave feedback and suggest better methods on each others tried recipes.
This is the liveliest board, so I hope we can get this going!
These are my Choc Chip cookies:
(I originally saw this recipe on Best Recipes and tweaked it slightly)Aprox 1/4 cup of melted butter
1.5 Cups of brown sugar
2 Cups of plain flour
1 Whole egg
1 Teaspoon of vanilla extract
1 Teaspoon of BiCarb Soda
Pinch of salt
Chocolate chips (I don’t measure these, so just add as desired)Melt butter and whisk in brown sugar
Add the eggs and vanilla to the butter and sugar mix
(but make sure it’s cooled down or they will turn into scrambled eggs LOL, yes it has happened to me with chocolate cake! Ew!)
Add flour, salt and bi carb soda and mix!
Keep on mixing until semi combined, add your chocolate chips until all combined
Spoon balls of the cookie dough onto baking trays (make sure they are sufficiently apart)
Bake at 180 degrees for 10-15 mins (fan forced oven)You can add cocoa powder to the mix to make them double choc cookies.
I usually add white chocolate chips with dark chocolate chips to the mix.
You can also get creative and add M&M’s, drops of peanut butter and nuts! The possibilities are infinite!!
Enjoy!(okay so I slightly over-baked the vanilla chocolate chip ones but they were still delicious! The chocolate ones were still unbaked in this picture)
4 November, 2013 at 3:30 pm #520735The question in the subject title seems to be aimed at me, so the answer is Shepherd’s Pie! Hey, have you a recipe for scones Cherrie? A good supply of scones could be a way to turn the clock back and also the key to good ‘elf! :)

I don’t have any recipes for scones, Martin. I attempted to make them once and they were too hard :oops: I am trying to improve my baking and cooking skills, I am getting there!
Oh please share your Shepherds Pie recipe!

5 November, 2013 at 1:49 pm #520737Well it is pretty much the same as anyone else’s recipe – except that I add a lot of custard! I do include tomato puree, turmeric, paprika and red wine. I will have to try it with beer one of these days.

mincemeat 500g
carrots – about 3 peeled and chopped
onions – 1 med peeled and chopped
oxos
packet of knorr spring veg soup
potatoesput the mince in a pan with about a half a pan of water (medium size pan) , bring to the boil and leave simmering for about 30 minutes. using a potato masher break the mince down with just the same action as mashing potatoes, simmer for a further 20 minutes, mash down the mince again to break it up some more.
Add the onions, oxos dependent on how many you intend to serve with it add one oxo per person) and veg soup and chopped carrots, cook for a further 30 minutes. then reduce the liquid by half by boiling quickly , then add gravy granules or cornflour to thicken gravy if needed. (a lot of people think mince should just be cooked quickly but the longer its left cooking the softer and tastier it is. ) put all the mixture into a suitable oven container.
boil potatoes till tender, mash with butter and milk and put on top of mince mix. put into the oven and cook till top is brown.

I’d love to read your recipe for Shepherd’s Pie with Custard :lol:
