    Boiled cake
    This used to be a popular cake in South Wales, it’s a lovely moist fruit cake and is easy to make. My great aunt always had a boiled cake in a tin “just in case of visitors” :lol:

    If you want to make it more special you can either replace some of the milk with whisky, brandy or rum, or feed the cake after baking.

    12 ozs mixed dried fruit
    8 ozs butter
    8 ozs soft brown sugar
    ½ pint milk
    1lb plain flour
    1 teaspoon mixed spice
    1 teaspoon bicarbonate of soda
    1 teaspoon of salt
    2 eggs

    1. Put the fruit, sugar milk and butter in a pan and bring to the boil. Boil for 2-3 minutes.
    2. Leave to cool for 15 mins then add the flour, mixed spice, bicarbonate of soda, salt and eggs.
    3. Mix well.
    4. Turn into a greased cake tin and bake in a moderate oven (350°F, Gas 4, 180°C) for 1 to 1½ hours.

    Tip:
    If you’re not sure about the consistency of the mixture, test it with the “count of 3 test” .
    Pick up half a tablespoon and count .. 1 and 2 and 3 slowly. If the mixture drops off the spoon to the count of 3, its ok. If it drops off before add more flour, if it still sticks to the spoon after 3 then add more milk.

    Here’s a funny story for you anc, I knew of a person in my youth who once made a supposedly ‘steak and kidney pie’ for her husband ….. replacing the steak and kidney with a tin of dog food :lol:
    Do you think your husband could taste the difference if you were to bake him a similair pie ? :lol:

    Actually, thinking about it, bet he couldn’t even find his arR se!! hehehehehe – ‘cor he would kill me for typing that in, but laugh all the same :D
