    Peanut Cookies

    Ingredients:

    * 1 egg
    * 3/4 cup firmly packed brown sugar
    * 1 1/4 cups all-purpose flour
    * 1/2 teaspoon baking soda
    * 1/4 teaspoon salt
    * 1/4 cup vegetable oil
    * 2 teaspoons vanilla extract
    * 1 cup chopped roasted peanuts

    Preparation:
    In a mixing bowl with a hand-held electric mixer, beat egg; blend in brown sugar. Combine flour, soda, and salt in a separate bowl; add to egg mixture a little at a time, alternating additions with the oil. Stir in vanilla and peanuts. Drop by teaspoonfuls onto greased baking sheet. Bake peanut cookies at 375° for about 6 to 8 minutes.
    Makes about 3 dozen peanut cookies

    1 cm of oil in a frying pan? Sounds like a lot of oil :shock:

    Yeah, it is jen jen lol – made it last night, say half a cm (you could always add more if it in the bowl after mixing if it looks a little dry) – I was just thinking about it when I was making it, also you put the parmesan on after you have tipped the mixture onto the spaghetti, not in the frying pan!!!

    ooops! :D

    Try not to burn it, if you do then cover with a generous spread of butter and a thick layer of strawberry jam to counteract the charred flavour.

    Oh, and maybe turn the smoke detector off before you start :wink: :lol:
