Welsh rarebit
Ingredients
25g/1oz butter
25g/1oz flour
150ml/5fl oz milk
175g/6oz cheddar cheese, grated
150ml/5fl oz brown ale
1 tsp English mustard
2 tsp Worcestershire sauce
salt and pepper
2 egg yolks
slices of toastPreparation method
Make a roux with the butter and flour, and leave to cool.
Bring the milk to the boil, then whisk it into the roux. Bring to the boil once again, whisking to ensure that it does not burn and also that the sauce is free of lumps.
Add the cheese, beat in and remove from the heat.
Reduce the ale, English mustard and Worcestershire sauce. When thick, add this mixture to the cheese sauce. Season well with salt and pepper and beat in the egg yolks.
Spoon on to the slices of toast and grill until bubbling. Serve with extra Worcestershire sauce handed separately.another St David Days teatime treat

Ingredients
200g high quality plain chocolate
125g butter, softened
125g caster sugar
4 eggs, separated
200g peeled and finely ground almondsBreak the chocolate into pieces in a bowl and set the bowl over simmering water to melt the chocolate, stirring occasionaly.
Cream the butter and sugar until light and fluffy. Separate the eggs, and add the yolks to the butter mixture together with the ground almonds and melted chocolate. Mix well to combine.
Whisk the egg whites until stiff and add to the batter, mixing gently.
Put the batter into a 20cm round tin, and bake in a preheated oven at 180 C / Gas 4 for about 20 minutes or until done.
Cool in the tin for about 15 minutes before inverting onto a plate.

Ingredients
100g drinking chocolate
230g self-raising flour
200g golden caster sugar
100g dark chocolate, minimum 60% cocoa solids broken into pieces.
125g unsalted butter
250g cooked beetroot
3 large eggsPreheat oven to 180 C / gas 4. Butter and flour a 18cm (7in) round cake tin.
Sift flour and drinking chocolate together in a bowl, then stir in the sugar.
In a bowl suspended over a bowl of hot water melt the chocolate and butter.
Puree the beetroot, add eggs and mix well.
Eventually add the beetroot mix to the dry ingredients and mix well.
Pour the mix into the prepared tin and bake for 50 mins until a skewer comes out clean. Leave to cool in tin for ten minutes.
Decorate by dusting with icing sugar or it is delicious served warm with custard.
For a healthier option serve with creme fraiche.

Bung a fried on top, serve with slkced cucumber and a dollop of salad cream as a side (not on the top all at once! lol have to confess I didn’t have much else in the fridge one day – but it is yummy! Lazy family lunch! :)

:lol: i think if you shouted at her ued end up wareing the cheese on toast rather than eating it :wink: :lol: :D
