COLD CONSOMME SOUP / MOUSSE:
Take one can of Campbell’s Condensed Beef Consomme. (NB: It MUST be Campbells’ condensed as it won’t work with ordinary consomme).
Pour this into a blender and add around 600grams of full fat cream cheese (NOT your girly reduced fat stuff).
Blend them together until they form a thick smooth creamy liquid and then add the magic ingredient – ONE flattened teaspoonful of medium curry powder.
Blend some more until all is thoroughly mixed with no lumps etc etc.
Pour the thick creamy liquid into ramekins or equivalent small individual portion dishes and place into the fridge either overnight or for 24 hours (covered in clingfilm to prevent the surface drying out & crusting) – so that the mixture sets.
It sounds a wee bit strange, but believe me it tastse absolutely fantastic.
Serve it cold as a starter and challenge your guests to guess what the ingredients are. 99% never get it right.
ohhh sounds rank btw but mum is best working with cambells condensed soup.. she does meatballs with the minestrone one excellent even know I can make doesnt taste the same…
