    Lemonade Scones

    Ingredients

    •700 g self-raising flour, plus extra for dusting
    •300 ml double cream
    •375 ml lemonade

    To serve
    •clotted cream
    •raspberry jam

    Method

    1. Preheat the oven to 220C/gas 7 and line a baking tray with parchment paper.

    2. Sift the flour into a bowl. Make a well in the centre and pour in the cream and lemonade. Mix first with a wooden spoon and then with your hands to make a firm dough.

    3. Roll the dough out on a lightly floured surface and cut into 12 circles using a scone (or cookie) cutter.

    4. Arrange the scones on the lined baking tray and bake until golden brown, about 10-15 minutes.

    5. Serve the scones with clotted cream and raspberry jam.

    Apologies to both Cosy and Arc.

    I didn’t realise I had spelled EASY wrongly with one hand!
    Arc, here’s your next one.

    Cheesy muffins

    ingredients

    2 cups of self raising flour
    2 cups of grated cheese
    2 cups of milk

    salt and pepper to season
    1 teaspoon of mustard powder or two of pre-made
    I teaspoon of cayenne or chilli pepper

    muffin tray x12 cup or 2 x6 cup
    greased with butter

    oven 180c

    put muffin pans into oven to get hot while oven is getting to temperature

    put all ingredients into a bowl and mix no beating, just stir it until its all evenly mixed.

    put even “dollops” of the mixture into each muffin cup

    bake for approximately 20 mins or until golden brown and well risen

    for a different flavour you can add chopped cooked bacon, onions, curry powder

    absolutely scrummy!

    Moelleaux au Chocolat

    100g dark chocolate (ideally about 70% cocoa solids)
    75g unsalted butter
    50g icing sugar
    25g flour
    2 eggs

    Preheat the oven to around 200C. Melt the chocolate and butter in a bain marie.
    Mix together the icing sugar and flour in a separate bowl. Then add the eggs and mix well.
    Butter two ramekin dishes. When the chocolate/butter is truly melted, pour the mixture into the flour/icing sugar/egg bowl and mix completely. it will go really gloopy
    Pour mixture into the ramekins about 3/4s full. Cook for approx 10mins, or until they have risen about an inch.

    Turn out onto a plate, serve with a coulis and quinelles of whipped double cream or ice cream

    Seems like you love cooking – me too and today whilst having my eyebrows done, told the girl, who is a veggie ,that I had some very nice recipes for her and would leave them in reception tomorrow.
