    Well, I’ve been absent from this site for a while and have just noticed this Cheesecake Topic and thought I’d share a recipe I stole from my sister.

    A very simple Double Delicious Cheesecake (I call it this because of the list ingredients)

    2 tubs of Philly (yeah I know I’ve mentioned Philly before but it really is good)
    Mascapony would probably work but why would I want to try it and risk disappointment)
    2 tubs of cream
    2 tubs of full fat vanilla yogurt (there’s no point going for a low fat alternative with this pudding it’s to die for and you most probably will)
    2 oz. vanilla caster sugar or normal caster with vanilla essence.
    2 oz. unsalted butter.
    2 oz. digestive biscuits for a thin base add more for a thicker lining, I sometimes add crystalised ginger
    2 Bowls
    2 8” tins.
    2 spoons.
    and a small dog in attendance.

    Method.

    Beat the cream until it forms soft peaks and empty into a cool bowl.
    Give the dog the empty tubs to lick out.
    Using the same bowl (no need to clean it) add the Philly and sugar, mix well, add the yogurt. Give the dog the tubs of Philly and yogurt. You could use a food processor for this stage; I do.
    Melt the butter. Place the biscuits in a plastic bag and break with the rolling pin you used when making the chicken breasts (you’ll find it in the kitchen drawer)
    Now I sometimes use ginger biscuits or amaretto biscuits which people give me for Christmas, no one likes them so you may as well use them up because the tin they come in is quite pretty.
    Mix the crumbs with the butter,
    Line 2 X 8” shallow tins with a layer of cling film (this will aid removal.)
    Spread the crumb mix over the film and lightly press with the back of a spoon to the desired thickness you require. If you have too much you may make individual portions in a ramekin of glass dish (looks good this way)
    Gently fold the mixture into the cream. It’ll be very light at this stage and the dog who will have finished his tubs and will be sitting attentively by your feet dribbling.
    Spread the mixture into the tins approx. 2” deep even Americans wont be able to handle this any thicker. ☺
    Decorate by dragging a knife over the surface like a ploughed field.

    Lick out the bowl because it’s too good to give to a dog and he’s probably had enough already.
    The Cheesecake will set in a chilled place over night as the yogurt’s live culture does its job.
    When ready place a plate on top and invert, remove the cling film and place another plate on top and invert again, adjust the decorated top which may have become damaged.
    Serve with a swirl of raspberry coulee; to the side never on top.
    Experience the silence while your diners eat.
    Should serve about 8-12
    You may find you can freeze it; I wouldn’t know it’s never lasted that long.
